Although it is hard to believe for most old fashion coffee lovers, there are people who like coffee brewed in cold water.
Cold brew system patented by Todd Simpson is based on a centuries old cold-water brewing process used in South America. Cold water brewing extracts the desirable flavor elements, but eliminates many of the undesirable oils and acids.
Cold brewed coffee is smooth and is easy on the stomach.
Simply by adding hot or cold water or milk, one can choose the strength of coffee they want. And, refrigerated, cold brewed coffee concentrate is fresh for 14 days.
The Toddy Maker consists of a plastic brewing container with a plug and filter at the bottom.

For cold-process coffee, you need two coffee beans and water:

1. Put one pound of your favorite regular grinded coffee into the top plastic container of Cold Brew Coffee Maker.
2. Fill to the top with fresh cold or cool water (about nine cups).  Make sure the filter is in place and the hole at the bottom is plugged.
3. Let the mixture sit undisturbed in the decanter for 8 to 12 hours.
4. The plug is then removed and the resulting concentrate is allowed to drain through the filter into a glass carafe.
5. The concentrate must be refrigerated.
6. For a cup of fresh coffee simply add one part concentrate to three parts boiling water, milk or cream.

The concentrate is good for about four weeks in the refrigerator, and can be frozen for several months. This is a great idea for those that don't want to brew a pot of coffee for a single cup.

Tips: Use only quality Arabica beans, grinded on a "coarse" setting.

Tip: Use tap, filtered or bottled water. Avoid distilled water because the absence of minerals will leave the coffee tasting flat.
