Vacuum Pot is delivering the best-tasted fine coffee. The process of
making coffee in these pots is considered superior to other methods.
The vacuum coffee pot is made of glass or metal and has an upper and
lower pot. The upper pot sits directly on top of the lower one. They
are both sealed with a stopper. A filter and tube are attached to the
upper pot, and the tube hangs down between the two pots. The buildup of
steam in the lower pot forces the water up into the funnel, where it
mixes with the ground coffee. A quick stir wets the grounds into the
water, and a small amount of water left behind in the bowl keeps the
steam coming and the temperature constant.
The downside is that it can be slow and tricky to use. But, if you want
a rich, excellent cup of coffee, try this method of brewing coffee.

As not much has change in the construction of vacuum pots, here you
have the original Instructions for using a Silex Vacuum Brewer, dated
back in 1920s.
1. Fill lower bowl with water to a point
two inches below top of neck.
2. Place and level tablespoon of coffee
per cup, and
one extra "for the pot", in the upper bowl. This is the quantity that
pleases most people. If you prefer stronger coffee add a larger
quantity to the upper bow, if you wish weaker coffee. use a smaller
quantity of coffee. Use the medium ground coffee
3. Place the lower bowl over the heath.
Seat the
upper bowl on the lower by giving a slightly twist to make airtight mal
between upper and lower bowl.
4. In the few minutes the water in lower
bowl will
rise and mix with the coffee in the upper bowl. Note: A little water
will always remain in the lower bowl. This is necessary to prevent heat
breakage.
5. Stir the mixture in upper bowl with a
spoon.
6. Now that all the water has risen to
the upper
bowl, steam will commence rising through the take to agitate the
mixture in the upper bowl. At this time, if you are using the electric
model, you should turn off the heath.
7. The water should remain in the upper
bowl three to
four minutes. Keep the vacuum pot over low heath for two minutes. Then
turn off the heath. The water will then remain in the upper bowl about
another minute, thus allowing the water to remain in contact with the
ground coffee the proper time of three to four minutes.
8. As the lower bowl cools a vacuum is
created, which draws the brew down into the lower bowl.
9. Remove the upper bowl.
10. Pour from lower bowl.
The lower half serves as a jug for pouring the coffee. Serve
immediately in order to taste the coffee at its best.

The
remarkably clear coffee will keep well if poured into a thermal carafe
after brewing.
